Since she has always been one to take pictures of her food before digging in, after years of her friends pushing her to create a standalone page, she finally did it.</span></p>\n<p><span style=\"font-weight: 400;\"> </span></p>\n<p><span style=\"font-weight: 400;\"> Pictures are worth a thousand words! Of course like many of us, it is never easy starting a new journey. Rachel said it can be hard working for yourself because there is never time to relax, to say no, and no off button. Work life tends to take over, and it does not leave much room for a social life.</span></p>\n<p>&nbsp;</p>\n<p><span style=\"font-weight: 400;\"> Sometimes she wishes that she worked a job that ended at 5pm, but then there would not be any of the freedom this career gives or the ability to connect with her audience.</span></p>\n"},{"acf_fc_layout":"instagram_embed","link":""},{"acf_fc_layout":"content_block","content":"<h2><b>A BALANCED LIFESTYLE </b></h2>\n<p><span style=\"font-weight: 400;\">Being able to have a balanced lifestyle can be tough, but not for Rachel, she has it down. As someone that has always loved traveling, she reduced the amount she traveled after moving to Miami,  which she says is paradise to her. This gave her the amazing opportunity to be able to showcase Miami’s local cuisines as well as share her many recommendations and travel experiences. </span></p>\n<p><span style=\"font-weight: 400;\">After a while, Rachel started to notice that her audience was starting to get curious about her workout and day to day routine. That is when she started incorporating behind the scenes footage of what goes on when she is not indulging in a big amount of food. Rachel does tons of yoga, spin and walking while eating a healthy meal behind the scenes; she will also sometimes walk 3 miles before eating. </span></p>\n<p><span style=\"font-weight: 400;\">Many of her audience ask what happens to the food she does not finish. Well, don&#8217;t worry, none if it goes to waste. She says that she often shoots with other bloggers, and sometimes even shares with the restaurant&#8217;s staff. Although it has been tough for her, with no sponsorships in months, she was able to use that time to achieve new cooking skills, be creative with how she showcases her outfits in her apartment, and create fun, new never before seen recipes on her page. This helped her become successful and grow into becoming her truest self while gaining a substantial amount of followers. </span></p>\n<p><span style=\"font-weight: 400;\">With restaurants opening up again, Rachel uses her platform to help local places who have been struggling. </span></p>\n"},{"acf_fc_layout":"instagram_embed","link":"https://www.instagram.com/p/B9ze2kzhQUJ/?igshid=sdntiiggr2bd "},{"acf_fc_layout":"content_block","content":"<h2><b>FUTURE PLANS FOR RACHEL </b></h2>\n<p><span style=\"font-weight: 400;\">When we asked Rachel where she sees herself in 10 years, she said that even just thinking back 10 years ago she would have never imagined she would be where she is now, so she cannot determine where she will be or where she wants to be in those next few years. She does know that the right door, made for her will come her way as long as she puts the skills she learned through photography, editing and negotiating to use. These skills, as well as the connections she has made will land her directly where she needs to be.</span></p>\n<p><span style=\"font-weight: 400;\">We also took the opportunity to ask Rachel   about the dream brands she wants to work with one day. But you don’t need to stick to one borough to try the best dumplings in NYC. </span></p>\n<p><span style=\"font-weight: 400;\">The reason New York has the best dumplings is that of its wide and diverse Chinese community. There are so many kinds of dumplings that there isn’t just one word to describe them all: boiled, steamed, and fried with all kinds of fillings. </span></p>\n<p><span style=\"font-weight: 400;\">It is hard to recommend a place where to try dim sum dumplings in New York because they are all good regardless of the price. Today, the theater is converted into a fancy restaurant </span><i><span style=\"font-weight: 400;\">Chinese Tuxedo</span></i><span style=\"font-weight: 400;\">.  </span></p>\n<p><span style=\"font-weight: 400;\"> </span></p>\n<h2><span style=\"font-weight: 400;\">New York Deli Sandwiches</span></h2>\n<p><span style=\"font-weight: 400;\">Just like with pizza, every New Yorker has his preference which deli is the best, but you should try New York famous food is the pastrami sandwiches.  </span></p>\n<h3><span style=\"font-weight: 400;\">Where to try: Katz’s Delicatessen </span></h3>\n<p><span style=\"font-weight: 400;\">Katz’s Delicatessen is the most legendary place in the city. It’s been open since 1888 and has the most expensive pastrami sandwiches in New York City.  </span></p>\n<p><span style=\"font-weight: 400;\">You are probably familiar with this place from many movies. Going up and getting plate after plate of things like beef and broccoli, General Tso’s chicken, and Mu Shu pork made me happy even after I felt bloated.</span></p>\n<p><span style=\"font-weight: 400;\">Without a doubt though, egg rolls were my favorite thing to eat. I never really cared much for cabbage, but somehow I didn’t mind eating it when it was fried in different spices. </span></p>\n<p><span style=\"font-weight: 400;\">Not only that but when I ate at a Chinese buffet, I felt like I was taking part in Chinese. This guy has traveled and ate all over the world, and the one thing he missed while in Korea is a Japanese 7-Eleven egg sandwich. </span></p>\n<p><span style=\"font-weight: 400;\">If he weren’t a man with a worldly palette, I would think he is out of his mind, but despite all the foreign food attractions around him, he misses something so simple, yet so delicious. It really makes him relatable to have experienced so much in the world of food, yet desire something so simple. </span></p>\n<h3>Go Follow Mike Xing Chen</h3>\n<p><span style=\"font-weight: 400;\">If it isn’t obvious already, watching Chen made me realize on what I have been missing out on. His love of food shines in each video and he really makes you feel like you are there with him in his adventures. Here is a Chinese guy that is really passionate about the best that Chinese food has to offer. </span></p>\n<p><span style=\"font-weight: 400;\">There is a secret world of food out there that is invisible to most Americans and Chen does a great job of helping you spot what is not authentic so you know you’re not having the wool pulled over your eyes.  </span></p>\n<p><span style=\"font-weight: 400;\">He doesn’t contest that the Americanized Chinese food doesn’t taste good, but instead emphasizes the fact that the real thing tastes even better and that you should go out of your way to try it. </span></p>\n<p><span style=\"font-weight: 400;\">Ever since that video, I never really looked at Americanized Chinese food the same way. I used to go to  Chinese buffets because I wanted a different cultural food experience, but now I just watch Mike Xing Chen videos to find out what I should be eating. </span></p>\n<p><span style=\"font-weight: 400;\">You can really tell Chen is passionate about food. He’s been making YouTube videos about food for about six years now across multiple channels including “Strictly Dumpling,” “Eat With Mikey,” and “Mike Chen.” </span></p>\n<p><span style=\"font-weight: 400;\">Many of his videos have millions of views and he frequently flies around the world just to have a bite to eat. So he’s not just some casual YouTuber, but a foodie with a seasoned palette. </span></p>\n<p><span style=\"font-weight: 400;\">Despite his experiences with food, first-class flights, and travel, Chen comes across as humble and relatable. He recently did a <a href=\"https://www.youtube.com/watch?v=Y5vIrZrFBdI\" target=\"_blank\" rel=\"noopener\">video</a> on the best burgers in New York, and it does not disappoint.</span></p>\n<p><span style=\"font-weight: 400;\">Want a juicy burger that has a steak-like texture? Try Peter Luger’s (they even give you a huge fatty charred slab of bacon almost a foot long). Or maybe you want a double stack of wagyu beef with double cheese and kimchi paste that oozes cheese and has so much juice it brings a tear to your eye? </span></p>\n<p><span style=\"font-weight: 400;\">Then the Black Emperor is the place for you. Or maybe you like a juicy burger but hate how it gets soggy? Boilermaker gives you a nice piece of beef and cheese in pita bread. Chen does a fantastic job of highlighting the parts of the meal that make you hungry just watching them, but in a way that’s down to earth and casual.</span></p>\n<h3>Mike Xing Chen and Business Class</h3>\n<p><span style=\"font-weight: 400;\">Another thing I like about Mike Xing Chen is that he talks about his experiences with business class flights. It’s always interesting to see what I’m missing out on and Chen really makes you feel like you’re there with him. You can see an example of this with his review of <a href=\"https://www.youtube.com/watch?v=vQpMNsGB6qI\" target=\"_blank\" rel=\"noopener\">Japanese Airlines business class starting at 10:27</a></span></p>\n<p><span style=\"font-weight: 400;\">Having flown Japanese Airlines before, it’s clear to me that the food on the plane he had was so much better. The presentation of the food that he got put our food to shame. </span></p>\n<p><span style=\"font-weight: 400;\">The quality and selection was so much better, (which it should be given the price of the ticket). They even have a phone you can order food items from throughout the flight. It was fun watching him go through and randomly order items just to try them out. </span></p>\n<h3>Mike Xing Chen and&#8230; Fast Food?</h3>\n<p><span style=\"font-weight: 400;\">One thing that Mike Xing Chen has a habit of is highlighting is the American fast-food restaurants and convenience stores that he visits in other countries. </span></p>\n<p><span style=\"font-weight: 400;\">Until I watched his videos, I felt the idea of visiting places that you could visit at home is wasting an opportunity to try something new and different, which is one of the reasons you visit a foreign country in the first place. However, Chen has a way of convincing you that this is something worth trying. </span></p>\n<p><span style=\"font-weight: 400;\">For example, in 5:45 of <a Absolutely. But it matters much more when brewing with hot water. Heat extracts flavors from coffee much faster and so the prep time has to be very exact.</p>\n<p>The most common coffee grind to cold water ratio is 1:10. If you prep 1 cup of coffee grinds and immerse it in 1 quart of water, the cold brew yielded will taste satisfactory.</p>\n<p>If not, adjustments can be made by adding water, ice cubes or cream. By principle, its always better to brew a stronger batch of cold brew, rather than a milder one. You can dilute a brew, but you can’t make it taste stronger.</p>\n<p>The only way to make it taste stronger is to let the coffee grinds immerse in the water longer. The longest recommended immersion time is 36 hours.</p>\n<h3>Alternative Way to Make Cold Brew at Home: Hario</h3>\n<p>Another great way to make cold brew is the Hario Mizudashi. Its extremely affordable ($20) and a great alternative compared to the Kitchenaid cold brew maker ($199). Like the French press, it is also a very intuitive way to make cold brew.</p>\n<p>Equipment:</p>\n<p>1.)Manual Grinder/Machine Grinder</p>\n<p>2.)Hario Cold Brew Maker, Mizudashi</p>\n<p>3.)Stirrer/Chopstick/Stirring spoon</p>\n<p>4.)1 Large Cup/kettle</p>\n<p>5.)Coffee Beans</p>\n<p>6.)Kitchen Scale, Coffee Scale</p>\n<p>Directions:</p>\n<p>1.)Use the grinder of your preference and grind coffee beans for medium coarseness.</p>\n<p>2.)Width of grinds should be no more than 1mm.</p>\n<p>3.)Weigh your grinds and record the weight</p>\n<p>4.)Pour grinds into the mizudashi filter.</p>\n<p>5.)Set the filter back into the mizudashi jug.</p>\n<p>6.)Prepare a 1:11 ratio of water in kettle/cup.</p>\n<p>E.g. if you had 100 g of grinds, prepare 1.1liters of water</p>\n<p>7.)Pour water in a circular motion over the filter and let the water slowly drip through the filter into the jug.</p>\n<p>8.)Gently stir the grinds so the water can filter through faster.</p>\n<p>9.)Once all water is poured, cap the mizudashi and place it in the fridge for 12 hours.</p>\n<p>10.)After 12 hours take out jug and drink for a taste test.</p>\n<p>11.)If the coffee is not as strong, leave it in longer.</p>\n<p>12.)Taste test until coffee is to satisfaction.</p>\n<p>&nbsp;</p>\n<h2>Choose the Best Coffee for Cold Brew</h2>\n<p>Most cafes might not use their best beans for cold brew. Instead, they reserve that for their espresso. What’s used for cold brew at the cafe could be coffee beans that have been around for 1 month or longer since their roasting date.</p>\n<p>These beans are no longer good for espresso or hand-brewed coffee and need to be used for something else.</p>\n<h4>Try Freshly Roasted Coffee</h4>\n<p>Use coffee beans that have just been freshly roasted.
